ABOUT SCA COURSES

 

The SCA CDS(Coffee Diploma System) is a internationally recognised education system aimed to meet the needs of coffee professionals everywhere.

The system has six modules:

  • Introduction to Coffee
  • Barista Skills
  • Brewing
  • Sensory
  • Green Coffee
  • Roasting

Each modules is avaliable at three different levels, points attached at every stage. Once you have achieved 100 points you will be awarded the SCA Coffee Skills Diploma.

  • Introduction to coffee : 10 points
  • Foundation level: 5points
  • Intermediate level : 10 points
  • Professional level: 25 points

SCA INTRODUCTION TO COFFEE

SCA Introduction to Coffee explains the origin and history of coffee, shows the different ways it is prepared and drunk, and introduces the huge variety of flavours that coffee can have. This module looks at the processes coffee goes through from farming to final consumption.

The half day course also includes a “coffee cupping” which allows you to taste the various flavours coffee has to offer. This course is suitable for those with no previous experience with coffee.

The class ends with a short written exam to test the knowledge learned during the course. The
successful pass of the course is rewarded with 10 points in SCA’s Coffee Diploma System.

Course length: 5 hours. It includes snacks and unlimited coffee during the course.

SCA BARISTA SKILLS

SCA Barista –
Foundation

This module allows you to develop coffee knowledge and practical skills to get you started in your barista career. The course is suitable for those with no previous barista experience, as well as for those with some experience that want to update their skills or develop their theoretical knowledge.

SCA Barista –
Intermediate

Intermediate Barista Skills provides a deeper understanding of the coffee itself and builds on existing practical skills. Milk techniques, including latte art, are introduced as well as health and safety, customer service and basic business. This course is suitable for people already working as baristas.

  • Understanding grinders, grinding, dosing and tamping

SCA Barista –
Professional

Professional Barista Skills is suitable for highly experienced baristas who have also completed the Intermediate level. It takes both a scientific and managerial perspective to coffee and making espresso-based drinks.

SCA Brewing –
Foundation

Foundation Brewing introduces the beginner to different brewing methods, using Chemex, V60, Aeropress and French press.

Intermediate

Intermediate Brewing course is a practical workshop where you will learn to analyse your grind profile, match your grind to your brewing method and to scientifically measure coffee strength and chart a coffee’s extraction.

SCA Brewing –
Professional

Professional Brewing is suitable for baristas with considerable experience who have also completed the Intermediate level. We explore the effects of temperature, pH, water quality, roast level, and grind size on flavour and extraction in brewed coffee.

SCA Sensory –
Foundation

On this course we cover the fundamentals of sensory evaluation. Through practical and interactive
methods we will learn to detect an array of aromas and flavours in coffee.

This Intermediate Sensory Course is aimed at professionals who want to get a deeper understanding of sensory science and how can it be applied in the coffee industry.

Coffee Cupping Workshop

For coffee lovers who would like to get an insight on how coffee tasting looks like. It is a very relaxed training with lots of sensory exercise through cupping.

Objective: During the course we will learn the cupping protocol and techniques first than we will practice . We will taste coffees from different regions and also different varieties and processes . All coffees will be analysed focusing on all attributes with the use of the Flavor wheel. Expect some real fun through learning about the properties of some beautiful coffees.☕️

Sensory Workshop

It is a structured sensory workshop. Main focus is to develop our organoleptic properties through lot of practical exercises.

Objective:

  • Aroma, Olfactory nasal excercise. Detecting different aromas and learning about negative and positive aromatics in coffee.
  • The Basic tastes practice using solutions.
  • Learning about Organic acids found in coffee . We will use memory games to be able to detect them in coffee.
  • With the use of different coffees through cupping method we will analyse taste characteristics to each sample on the table.
  • Mouthfeel and body definition and how we precieve them though each coffee we taste.
